There is only about 1mm up/down play in the bolt, so almost fully on.

Are these like sockets for T-nuts?

No but was thinking that the bolt may go inside the key then the hex of inner part of key would hold nut

I'm going to try attacking it tomorrow night with a drill, and if that doesnt work then well, it's buggered.

I'm fairly sure that it will not be possible to jam up the T-nuts, they've just torn through the original wood, they are really stuck on the bolts :(

Calls for a brand new drill bit - give it the best chance of success :)

Drilled out the bolts last night. Took a hell of a lot of drilling and the bottom of the cab is now full of metal spirals as we couldn't work out how to use Tonys hoover

Used an expensive Dormer titanium nitride tipped drill bit. It's certainly not as sharp as it was when I started drilling the first bolt :(
