The Curry Thread

Since spending a week cooking a ton of curry and starters for my 60th birthday bash, then eating up the leftovers afterwards, i haven’t fancied a curry since. it’s been 3 weeks since my birthday and i still can’t get excited about curry. So I made a big pan of warming fiery chili.

Bloody hell @AlanJ thats a veritable banquet!

I’ve made the Bhuna a few times in the last couple of weeks. My favourite so far has been roast cauliflower, butter beans and lentils. Roast squash isn’t too far behind though.

The real trick with it is not to stir and to let it burn a little on the pan between the gravy stages.

I think I could genuinely fool a punter in a blind test comparing with our local curry houses.
 
yep deffo let it burn a bit. i wish i had my old gas hob instead of an electric one. gas is much better for cooking curries. (even if it is expensive 😂😂)

Amazing Al! how long did that lot take to make?
Love the onion bhajis/somosas etc. I really should try making some, I just don't like deep frying anything.

We have a built in deep fat fryer here and it’s amazing, I have the belly to prove it😂

It took a couple of weeks to be honest. I rarely make samosas and pakora etc because of the deep frying, but it’s a must to get them tasting right.

That’s the problem isn’t it. 😂😂 Mine is just one i have to get out and fill up. i rarely use it.
 
Sticking to just cooking for myself ( rather than a small town like Alan :) ), a pretty hot chicken tikka Jalfreze 🌶️ 🌶️ 🌶️ .

Finally got my curry mojo back after august’s mammoth cooking session.

Samosas and bhajis

Wherever I make samosas I usually have some filling left over, so I make this into bhajis. Just add gram flour and rice flour to the samosa filling, stir it up and deep fry blobs of the mixture.
 
I had some friends round recently and they were asking me where to get large pans to cook curries in, I showed them this: cheap as chips £12 delivered, and they also have even bigger ones at good prices too.

8 hours on the stove, even put the pan with water on there to get it hot before I put on the hob for the rice😂

Any suggestions for an easy to make curry?
Can you do one in a slow cooker? 😋
 
My mate made me a lovely curry this evening, no idea what it was, but really enjoyed it.

If anyone needs a large pan to cook their currys, these steel pans are huge - various sizes nd cheap as chapattis

 
Chicken Tikka Samba. Never heard of this one before. A medium curry with lentils. Spiced mine up with a sprinkle of chopped green chillies and chillie seeds. Recipe c/o Al's Kitchen.
