Depends what you want to get out of it? The factory settings are absolutely fine for a fair game but you can tweak almost anything to your taste in the feature adjustments menu.
Common tournament software adjustments are making the life ring more difficult to light or use, adjusting the ball save timers on the plunge and multiballs, and turning the extra balls off.
Physical changes, I feel that sling sensitivity is a massive thing on Jaws because you end up in them a lot after hitting the chum bucket, boat or fish finder targets. Then game pitch (around 7 degrees is nice - make sure you can shoot all three ramps cleanly) and tilt tightness as with any game.
