The Curry Thread

I have a freezer load of curry gravy and I’ve probably overdone the bhuna recipe at home.

Are there any other tasty recipes you guys do with the gravy?

Pathia, chasni, dupiaza....etc.... I recommend Al's Kitchen on YouTube, plenty of others though, misty Ricardo, the curry guy, the curry kid, latife, tons of them to learn from.
 
Had some curried lamb I made left over so decided to make some Jamaican patties, never made them before. Had some beef patties brought home from a Caribbean place that were virtually empty and very disappointing last week so thought time to give it a go, turned out pretty good although the first one I formed was a bit iffy.
Will be doing this again with leftovers but be careful as everything turns turmeric yellow😬

I went to one of my old haunts in Bradford on Thursday evening The Kashmir, been there since the 1960’s and hasn’t changed much since i first went around 1977. Meal for 4 of us, popadoms, starters, mains, chapattis, rice and a garlic nan £48 and it was all spot on Bradford traditional curry.

Bought a rotisserie mod for my Webber from Amazon for £95, amazing😎
Couple of chickens from co-op and some Reggae Reggae sauce to marinate and baste, spot on.
One load of charcoal and about 2:30 hour cook time with lid on.
Would rather of had a curry in Bradford though😭
Also did some more Jamaican patties today with left overs.

I have a recipe for blackened chicken

1) Place chicken in oven

2) Quickly check Facebook
 
I tried a new way of doing jerk chicken, basically a bowl full of water with mr browns curry powder, hot pepper sauce, bbq sauce, ground all spice, ground black pepper you can add spring onions etc and blend it all together. Marinade the chicken for 24 hours then put on the bbq, pour the leftover marinade in a pan and boil it up good and proper to kill any bacteria from the raw chicken. Near the end of cooking the chicken dunk the chicken in the pre boiled marinade and back on the bbq to finish off.

You can also use the pre boiled marinade as a dip, pour on chicken, pour over chips etc. Best I have tasted yet.
Got another batch in the fridge marinating.

I had my first curry takeaway since pre-covid (and moreover pre finding this thread).

It was bland and watery, nothing anywhere near as tasty and flavoursome as the vindaloo and bhunas I got from here!

The pros and cons of getting into cooking:

On the downside paying for average food starts to really irk you as you can see where the corners are cut or the lack of care taken

On the upside it's a pleasure to pay for really good food as I think you respect the talent behind it even more.
 
I made a Lemon Chilli chicken, tastes better than it looks 😀 I opted for chunky chips.

Very loosely based upon a recipe in the Misty Recardo BIR book, my house smells like a curry restaurant now 😊

I’m getting better at them, made a massive batch of base sauce and have it all frozen in separate containers.

Misty is good, so is Al’s kitchen, Curry guy and Curry Kid…been watching Latifs Inspired (spelling?)

Just can’t beat a good curry 😊
 
Fired the tandoor oven up, so so good it ridiculous😋
Cooked chicken tikka that I put into my masala sauce the other day, did try some in an air fryer which was good but doesn’t compare.
Today I did some jerk chicken legs skin off, amazing.

Not used it since the end of last summer, my next kitchen needs one built in😂
