I'm aware that PBR sell them but I haven't used them before and I understand that they can be hard to deal with so if anyone happens to have a schematic for "Sweet Hearts", I'd be grateful. The problem I'm having is that the 1 point relay is being held on but I can't find any closed switches, plus the score motor keeps running after the last ball drains (but you can still start a game and it will then behave).

If the 1 energized as soon as you start the game, is a closed switch, maybe the bumpers? Did you checked all the playfield switches and the bumper under the playfield?
for the game over.. did you checked the switches of the ball through?

Well, I found a contact on the score motor which I could bypass with a piece of card and that allowed all 5 bumpers and all the side switches to score 1 point normally, but the kickers do not score so that might be a clue - kickers do kick normally though.
Ball trough switches checked ok, and the game over sequence is triggered by the last ball draining.
