Bill Paxton Pinball was done by Ben Heck who has gone on to be involved in Americas Most Haunted.
There's a guy in Sweden who's also working on a Bioshock-themed Pin too. There's loads of info about it here: http://poormanspinball.blogspot.co.uk/
And I believe @TYHO also did a re-theme on a Genie and made it into a Ramones themed pin.
So yeah, there's a few about that I know of. I have no doubt there are others i've missed.

You could incorporate an add a ball as 'just another cup of tea' 
every drop target could say "go on.... go on..."
Obvious the wizard mode with culminate with kicking bishop Brennan up the a++s. Maybe a welcome return for the vari target?

I'm thinking when hitting the drop targets you get "Down with this sort of thing!" and resetting them "Careful now!"
