To answer the OPs original question and evaluate the older games first, as almost all modern Stern or JJPs have immense code which the average or even good player will never get near to completeing.
First point. People mention about games being repetitive or 'wood choppy'. Put simply it depends how good you are. Take the main MB on any of LotR, WPT, TSPP to qualify for the wizard mode you need to hit a certain target or score. If you can do that on your first MB great. However if you can't the 2nd MB is harder to achieve, then the 3rd harder still etc. etc. so it becomes repetitive trying to restart the same MB over and over, because YOU didn't hit the target on the first go.
The same can be said for modes which need completing, rather than just starting. Once you've failed a particular mode, you've then got to play all of the other modes to start the cycle again and then attempt to complete it again.
From the games I've owned, and not including LCD screen games.
I've reached the wizard mode on games where it's considered difficult to get to on - AcDc, TSPP, LotR, SM, Family Guy, Avatar,
BBH, BtDK. (There must be others, but these are off the top of my head)
Of those ranked by the most enjoyable to play long term where AcDc, Av, TSPP, SM, LotR, BtDK, FG, .......

From games I've owned where I haven't reached wizard mode are WPT, PotC (Stern) , XM.
Came close on PotC a couple of times of completing 4 winds but not Gauntlet (or the other way round), likewise XM, but not got close on WPT, despite it being the game I've played and owned for the longest time over the years. Mainly due to the difficulty in relighting successive MBs as mentioned at top of post.
If you're looking for an older game with lots of depth and code -
without doubt AcDc would be my number 1 choice. Avatar would be 2nd (But you do need to be a very good player to even consider the possibility of wizard mode). The others pick your favourite theme, they're much of a muchness, except
BBH which is awful and long winded for no other reason than to make it longwinded. The day after I completed Open Season it was up for sale.
